Lychee, Mango, Avocado & Shrimp Salad

- 12 shrimp, shells/tails removed
- 2 c. baby or other greens
- 1 ripe avocado, skin & pit removed, sliced
- 1 mango, peeled & sliced
- Handful lychees, peeled & seeded, sliced in half (fresh is ideal, but canned is fine)
- Handful fresh mint leaves
- Handful fresh cilantro leaves
- 1 Tb. rice vinegar
- 1 Tb. soy sauce
- 1 tsp. brown sugar
- 1 Tb. canola or vegetable oil
- 1 small clove garlic, peeled, grated or chopped
- Juice of ½ lime
- Pinch red pepper flakes
- Pinch kosher salt & freshly ground black pepper
- Steam or roast shrimp for a few minutes until pink (don’t overcook!). Remove, place on a paper towel-lined dish and refrigerate 15 minutes.
- In a small bowl, combine dressing ingredients and whisk until sugar dissolves. Refrigerate until ready to serve.
- Arrange greens, avocado, mango, lychees, mint, cilantro and shrimp on two pretty dishes. Sprinkle with dressing and serve.
