Fresh tuna ceviche makes a perfect appetizer on these crunchy cucumbers.

Ingredients
1 lb. fresh Yellowfin tuna (or other tender, light, white fish)
Juice of 1 lime
Juice of 1 lemon
4 Tb. minced sweet onion
1-2” piece fresh ginger, chopped (depending on how spicy you like it)
½-1 small jalapeño, seeded & minced
2-3 Tb. minced red bell pepper
2-3 Tb. fresh cilantro, chopped
2-3 Tb. fresh mint, chopped
Dash kosher salt
Dash freshly ground black pepper (optional)
Instructions
Cut the fish into bite-sized pieces (see Notes for a tip on easy cutting).
In a medium glass bowl, combine the citrus, onion, ginger and jalapeño; add fish to this mixture and stir well.
Refrigerate about 2 hours (stir periodically to ensure the fish is evenly coated).
Just before serving, drain the liquid from the fish. Add red bell pepper, cilantro, mint and a dash of kosher salt; stir well and taste for seasoning.
Serve with tortilla chips, crostini or plantain chips.
Notes
For a much easier way to cut the fish into small pieces, simply freeze it for about 20 minutes on a baking sheet. When it's firm, it will be easier to control the dicing process.
