Lychee, Mango, Avocado & Shrimp Salad

Lychee, mango, avocado and roasted shrimp pair nicely together for this delicious summer salad.

  • 12 shrimp, shells/tails removed
  • 2 c. baby or other greens
  • 1 ripe avocado, skin & pit removed, sliced
  • 1 mango, peeled & sliced
  • Handful lychees, peeled & seeded, sliced in half (fresh is ideal, but canned is fine)
  • Handful fresh mint leaves
  • Handful fresh cilantro leaves
  • 1 Tb. rice vinegar
  • 1 Tb. soy sauce
  • 1 tsp. brown sugar
  • 1 Tb. canola or vegetable oil
  • 1 small clove garlic, peeled, grated or chopped
  • Juice of ½ lime
  • Pinch red pepper flakes
  • Pinch kosher salt & freshly ground black pepper
  1. Steam or roast shrimp for a few minutes until pink (don’t overcook!). Remove, place on a paper towel-lined dish and refrigerate 15 minutes.
  2. In a small bowl, combine dressing ingredients and whisk until sugar dissolves. Refrigerate until ready to serve.
  3. Arrange greens, avocado, mango, lychees, mint, cilantro and shrimp on two pretty dishes. Sprinkle with dressing and serve.
