Recipe adapted from (Crispy Roasted Okra Fries).

Serves: 3 cups
Roasted Okra
  • 3 c. small okra pods
  • 1 Tb. bacon fat
  • ¼ tsp. kosher salt
Dipping Sauce
  • ¼ c. mayonnaise
  • 2 Tb. sour cream
  • 1 tsp. Sriracha (more or less to taste)
  • Dash kosher salt
  • Dash freshly ground black pepper
  1. Heat oven to 425 degrees and place a baking sheet (or baking stone, if you have one) in the oven.
  2. Rinse okra and thoroughly dry each piece with paper towel or kitchen towel.
  3. Slice the okra in half, lengthwise.
  4. Remove the hot baking sheet from the oven and spread the fat onto it. Toss the okra into the fat, mixing with a large spoon or spatula. Sprinkle with salt.
  5. Place the baking sheet into the oven for about 5 minutes, then toss and put back into the oven until crispy (about 5 minutes) - See Note.
If your okra pods are not ‘petite’ sized, leave them in the oven longer, until fully browned and crispy (about 5-8 more minutes than called for).
