Apple Cake with Cream Cheese Frosting

Spicy apple cake with cream cheese frosting is simply divine.

  • 3 medium apples
  • 1 large egg, beaten
  • ¼ c. vegetable oil
  • 1 c. granulated sugar
  • 1 c. golden raisins
  • 1 c. all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 1 tsp. ground nutmeg
  • 3 oz. cream cheese, room temperature
  • 1 stick unsalted butter, room temperature
  • 1 tsp. vanilla extract
  • 2 c. confectioner’s sugar, sifted
For the Cake
  1. Heat oven to 350 degrees.
  2. Grease an 8X8 baking pan; set aside.
  3. Peel and core apples, then grate on a box grater (or use your food processor’s attachment).
  4. Add apples to a large mixing bowl, along with beaten egg, oil, sugar and raisins. Mix well.
  5. Sift flour, baking soda and spices.
  6. Mix dry ingredients into apple mixture until just combined.
  7. Pour batter into prepared pan.
  8. Bake for about 20-30 minutes, or until toothpick comes out clean (check around the 20 minute mark, just to be safe).
For the Frosting
  1. Add cream cheese and butter to a mixing bowl; mix on high speed until well combined.
  2. Add confectioner’s sugar a little at a time until smooth and creamy, then blend in the vanilla. If it seems too ‘loose’ add a bit more confectioner’s sugar to desired consistency.
