2020 Wrap Up

December 18, 2020 by Nicole Coudal

My first blog post of 2020 highlighted no-crust Honeybell pie; my last post was all about raisin pie.   I didn’t plan it, but I think it reveals how much I love pie. . .

Even when I felt like I was moving through quicksand due to the heaviness of this pandemic-filled year, being in the kitchen helped me cope (I bet many of you felt this way), and I somehow managed to eke out 40 blog posts, including 3 Field Trip Fridays and 2 new product releases.  I hope you enjoyed it all!  But this is my last post of the year because I need to take a break.  Plus, I’m still in the throws of holiday baking, wrapping presents, and remembering many Christmases past with loved ones.
But if you still need recipe inspiration, try some oldies-but-goodies on my blog, like the mushroom & leek galette, apple & Butternut crostini, roasted chickpeas, or roasted okra as appetizers; or orzo risotto with salmon & broccoli, or Brussels sprout/pear/Prosciutto salad, warm vegetable salad, a Buddha bowl, or salmon and potato hand pies, for the days when you ache for something other than turkey or ham; for dessert, vintage raisin cake, single-serving plum cakes (these would also be yummy with seasonal pears), apple cake with cream cheese frosting, olive oil & orange cake, or Lebanese sweetmeats.

Before I sign off from 2020, I wish you a very happy holiday season, and all good things in 2021!

–Nicole

I’m so glad my blog has been helpful to you during this year of ‘super intense’ cooking. And, like you, my husband now knows that he cannot ask that question about dinner until at least Noon (he learned the hard way). Keep cooking, Wendy!

Your blog posts and recipes have really helped me through this year of super intense cooking! I have discovered some go-to recipes on your site that have made meals and snacking much more interesting and have lessened the tension around the daily question of “what’s for dinner?” A question that I forbid my husband to ask until he changes out of his pajamas. One favorite is the granola. I make a batch every week. I re- named it Pandemic Super Granola.
